Chewy Peanut Butter Cookies Recipe
Peanut butter, staple ingredient of a Canadian childhood. Sticky hands and messy smiles. Let me tell you, when i moved to Sweden peanut butter wasn’t even on grocery store shelves! Luckily this is no longer the case 10 years on. Jordnöt as it is known in Swedish is roughly translated to earth nut which might allude to the general Swedish opinion of peanuts. Dusty, muddy, sandy, blah. Hence began my journey to sway family and friends to the magic of the nut. What better way then sharing Grandma McC’s glorious peanut butter cookies.
Chewy Peanut Butter Cookies
- 1/2 cup peanut butter
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar (packed)
- 1 egg
- 1/2 tsp vanilla
- 1 cup flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tbsp white sugar
Preheat oven to 350°C (180°F)
Beat peanut butter and butter together until soft
Blend in 1/2 cup white sugar and brown sugar into the butter mixture till smooth and fluffy
Beat in egg and vanilla until smooth
In a separate bowl blend flour, salt and baking soda
Pour the flour mixture into the butter mixture and fully blend
Scoop out tablespoon-sized amounts of the cookie dough
Roll to the shape of a ball between your hands and place on baking sheet
Repeat step 8 until the baking sheet is filled with 16 cookie dough balls
Using a fork dipped in 1 tbsp sugar, make a crisscross pattern on the top of each cookie until flattened
Bake for 10 minutes
Let cookies cool, then repeat steps 8-11 with the second batch
I highly recommend finding a smooth peanut butter instead of crunchy as it provides the best texture to the cookie after it’s baked and keeps the chewiness.
